Ingredients
345 calories per serving
1 can/carton of tuna
1 small tin of chopped tomatoes
1 tablespoon of salt free tinned green giant sweetcorn
1/4 large tin of drained chickpeas in water
1/4 Large tin drained Cannellini Beans in water
(white beans are a good source of iron)
red and green sliced peppers
cherry tomatoes
red onions sliced
Garlic paste
Squeeze of fresh lemon
Pinch of Cayenne Pepper
Genourous amount of chopped coriander to garnish
Method
Stir all the ingredients into a tray.
Reserve the coriander as a garnish.
Cover the tray with foil.
Steam in the oven for 45 minutes at gas mark 6
Serve on a plate when cooked.
Garnish with a generous amount of coriander.

Was worried this would be awful but the cayenne pepper actually worked really well with the tinned tuna.
I ate the whole recipe and enjoyed the variety of ingredients.
If you are cooking for people not slimming serve with rice, enchalado wraps, cheesy nachos,( cheese melted on dorittos), cream cheese and chive.
At least they are getting some healthy nutrition as well as covid comfort food and rice.
If you are slimming use brown rice instead or increase the chickpeas to be more filling.
I graze so I tend to make small potions.
If food & kitchenware ever comes back I would go shopping to a Cookery shop for this recipe.
I would make fresh seared or pan fried tuna and have this recipe as a sauce to go over it.
We had fresh tuna and brown rice every week before covid.
I wasn’t this adventurous then; just made mushrooms, onions and seasonal veg to accompany it.
I’ll definately use Cayenne Pepper with fresh tuna if I ever cook properly again.
Instead of lemon juice I would use lime juice.
Instead of steaming I would pan fry, then transfer to a saucepan.
This is a really healthy weekday dinner for after work when you want to eat but don’t have time to cook.
We used to sit down at the dinner table every night and eat fresh food, sometimes with a glass of wine from the drinks allowance and a large glass of mineral water with a slice of lemon or lime and ice.
Also with a large salad bowl filled with fresh salad, (different salads each time.)
Forgot how bad it has got with covid.
We used to have a lot of cookware, funnily a lot of it was from the Ikea cookware section, (was shopping there this morning.)
Since the fat acceptance movement you can’t get specialist cookery products anymore just basic stuff for baking.
I like baking sometimes, (on my day off), but find cakes a bit boring and too easy; for instance I once made a chocolate cake and a coffe and walnut cake thinking it would be nostalgic and it was actually a bit dull compared to pre covid double fudge chocolate cake and so forth that you used to get in restaurants. If I eat something as a treat I prefer something a chef has made that I can’t make, wonder if other people miss restaurants.
Glad I remembered this, hopefully more memories will come back.
