When I was little my Grandad taught me how to grow plants. Really enjoyed learning that.
Through life I’ve grown tomato plants and herbs.
I liked cooking with herbs I grew myself and hope to get a greenhouse again one day.
Until then I’m opting for the little herbs grown in plant pots at the supermarket or the ones in little packets.
As I’m learning to cook again I felt inspired to try herbs with mushrooms on toast.
This is one of my favourite breakfast/brunch options and I used to almost live on it.
Now I’m learning about nutrition I realise it was the vitamins in the mushrooms that I was craving.
Which vitamin is rich in mushrooms?
Mushrooms contain high amounts of selenium, vitamin D, and vitamin B6. Selenium can help prevent cell damage in our bodies, vitamin D helps with cell growth, and vitamin B6 helps our bodies form red blood cells. All of these nutrients in mushrooms help to maintain a healthy immune system.

One thing I used to tire of though was washing mushrooms as I ate so many of them.
I plan to wash mushrooms again one day, but yesterday I discovered tinned button mushrooms.
I taste tested them for you first before writing this up.
I have to say they are a eureka find.
I’ll use these all the time now like tinned grapefruit.
They are also low in everything.
I steamed mine so not sure what they are like fried.
Have to say they tasted just as good surprisingly.
Wrote the recipe up even though it is probably obvious, the exciting find was the tinned button mushrooms.
Great time saver if you have a busy life and find it hard to find time to fit cooking in.
I had this for dinner with salad as I’m slimming.
Button Mushrooms on Wholemeal Toast with Parsley

Ingredients
1 285g tin of button mushrooms drained
4 slices of Hovis nimble bread
Fillipo Berrio Olive Oil
Philadelphia lowest cream cheese
Fresh Parsley to garnish
Sea Salt & Black Pepper
Method
Drain the mushrooms and put in a tray.
Dowse in Olive oil, sprinkle on sea salt and pepper to taste.
Cover in foil.
Steam in the oven for 40 minutes at gas mark 6.
Make the toast in the last 6 minutes or according to taste.
Spread on the Philadelphia Cream Cheese.
Pile on the button Mushrooms.
Garnish with Parsley.
Serve with Sparkling mineral water.
Or
Fresh Coffee & Orange juice if it is for Breakfast.
