We tried an Italian chicken recipe at the weekend but adapted it as usual as we can’t use our hob, purchase rosemary due to post covid food shortages, I react to buttery dishes for some reason ~ not sure why and I can’t have chilli due to my illness that has gone but still have to be carefull.
Moaning aside I adapted the recipe to suit our needs and going on what we could get ~ as you do.
I’d serve this with potatoes but as you can’t get them we are having the diet chips still as we relax slimming a bit at the weekend, (still really low calorie anyway.)
We opted for Vermouth for our Aperitif.
The recipe
Rosemary & lemon roast chicken

We couldn’t get rosemary but I used to grow herbs and cook with them and hope to do so again.
Adapted Recipe
Italian lemon chicken with bambino carrots
(as it was a baby theme last week.)
This was even easier to make.
If you do the Medittarean diet you may prefer this to using butter.
I would probably still do this version if I had an extractor fan.
I don’t count the calories in alcohol or olive oil, but you could work out the calories in the oil if you do.
Normally I used to have a garlic mincer but that just wasn;t a possibility here, then I remembered flavoured olive oil.

You used to be able to get loads of food products like this.
I just added the fresh lemon juice to half the bottle of this.
(just squeezed it by hand.)
The proportions probably needed working out better as it ended up tasting more like Italian garlic mushrooms than lemon, unless that was what it was supposed to taste like?
(Got 9 out of 10 from the nerd anyway ~ guess the proper way must be loads better.)
I used the whole bottle at £2.75 you could be more sparing or brush the oil on with a pastry brush like I found in a 50’s film in the 50’s weekend.
As we slim all week I think the olive oil does us good.
We put another lemon inside the chicken whole.
(Keith Floyd used to recommend that.)
Then just cooked as normal.
Would love to try it with rosemary.
I would of done baby potatoes also maybe but we did the slimming chip idea instead as it is all we can get.
Then we did the carrot idea with pre pacjed baby carrots

Chef’s Style Carrots 240g

As I’m not allowed chilli, I made one tray of carrots in olive oil and one tray with chilli and olive oil.
So it ended up being chilli carrots.
These cooked for the same time as the chips.
Salad
Made the:
QUICK ITALIAN SALAD
Toss a couple of large handfuls crisp salad leaves with a few Peppadew peppers from a jar and some sliced black olives. Top with a few tbsp toasted pine nuts and dress with olive oil and red wine vinegar.
Made it just like this but we couldn’t get peppadew peppers.

We had some wine in the drinks cabinet so came in handy to serve with this recipe, I had white wine spritzer.
The nerd chose red.
Conclusion
As I’m not a cook or chef I just can’t think these ideas up.
I can follow recipes though and also enjoy cooking a dinner on Sunday.
This has made an exciting difference to our normal chicken and chips.
Hopefully the flavoured olive oil is a sign food is coming back.
I used to grow my own herbs and cook with them.
I’m not a gardener but I enjoy growing herbs, hopefully will try this recipe one day with fresh rosemary.
The lemon makes the chicken more succulent and flavoursome.
I loved it all, will definately do the carrots again also and the salad.
I also poured some of the oil from the chicken onto the carrots which worked really well.
I give this 10 out of 10.
The proper version must be 20 out of 10.
It is really good as it presents and impresses so well if you aren’t a cook.
The Cinzano as an Aperitif was very sophisticated.
I served it with ice and lemon.
we finished with Ameretto Digestif, coffee and Bendicks after dinner mints.
Baby week was a great success.
